Together with Pepe we nicknamed this lot Sunset, as it reminds us of the beautiful sunsets in Ayampe, Ecuador. With its pristine and refined yellow flavors, this coffee is sure to transport you to a state of relaxation and tranquility.
Finca Soledad is proud to be a bio-dynamic farm, using practices that processing techniques that compliment the coffees while working in synergy with the environment. This Typica Mejorado utilizes one of the most interesting processing techniques we've seen, resulting in a clean and vibrant profile, reflective of some of the best washed coffees from Ecuador.
The coffee was hand picked at peak ripeness, before being floated to remove any defects. The cherries were then held in open tanks for 12 hours, depulped and finally dried for an additional 24 hours in sealed bags, before washing, and drying on raised beds.
With notes of lemon verbena, jasmine, and manuka honey, this coffee has a lively structure that will awaken your senses and leave you feeling refreshed.
Pepe Jijon is not only a coffee producer but a true adventurer, being the first Latin American to solo climb the 7 summits. Today, he farms other varieties such as Gesha and Sidra on his 120-hectare cloud forest, with only 4 hectares dedicated to coffee.
