This coffee is brought to you by the farmers behind the Aguthi Farmers' Cooperative Society. This co-op was established to give smallholder farmers access to milling equipment, and the ability to sell their coffee to the international market. In 2019, Carbonic Maceration infrastructure and new drying beds were constructed by Project Origin as a commitment to further improve their coffees.
When coffee cherries are picked perfectly ripe, they are sorted by hand then placed into temperature and humidity controlled tanks flushed with carbon dioxide to remove oxygen from the tank. This control of fermentation introduces different kinds of yeast production in the tanks, resulting in exciting flavours in the final cup.
This particular lot has resulted in flavours reminiscent of red, orange and yellow fruits. We taste intense raspberry, blood orange and floral hibiscus!
