Alejo Castro Kahle continuously strives to produce excellence through his high-quality coffees, inspired by his ancestors in the heart of Costa Rica on the slopes of the Poás Volcano in the West Valley. This is our second year purchasing from Alejo and we're very excited to share with you one of our personal favourite varietals. In 2020 this particular lot was processed as an Anaerobic Natural and took our 2nd place in the prestigious Costa Rica Cup of Excellence. However, this year Alejo has allowed us to share with you his innovative processing combining the SL-28 varietal with a Warm Anaerobic technique.

This varietal is described by Alejo himself as "fruit punch and candy"! Here he describes the Warm Anaerobic process: "Like all varieties we choose the right moment to start harvesting it, measuring brix content. Then we bring the cherries to the wet mill where we separate floaters and wash the cherries so they don't have dirt going into the anaerobic tanks. In this case we left the coffee 5 days inside the fermentation tanks, measuring temperature, brix content, acidity (ph) and time. The difference in the Warm Anaerobic is that we expose the tanks to sunlight so we get temperatures up to 25-30C when with our forest shade anaerobic it's just 15C. So we have a faster fermentation happening inside the tank, after this it was taken to the drying patio for 14 days and then 8 hours in a mechanical dryer."

In utilising this Warm Anaerobic fermentation technique, this coffee shines with the expressive notes of sophisticated red berries, vanilla sugar, and bright, juicy passion fruit or simply put a yummy 'Fruit Punch'. We know you will enjoy this lot just as much as we do at the roastery!
