Andres Guaca | Low Temperature Anaerobic Pink Bourbon
We're excited to partner up with Finca Guacobia to share with you this nano lot, with only 59kg produced. Andres Guaca, is a third generation coffee farmer who runs the farm with his wife and two sons. Five years ago, he made a decision to change his post-harvest practices introducing more controlled, experimental fermentations. He also began planting more exotic varieties such as Pacamaras and Geishas.
Finca Guacobia sits in what has recently been coined the specialty coffee paradise of Colombia, and also the birthplace of Pink Bourbon. Combing long fermentation time with low temperature anaerobic conditions has allowed notes of sparkling champagne, papaya and chocolate fudge to shine.
