In 1965 Eudoro's father purchased three farms including El Recuerdo, located in the area of Nueva Segovia, Nicaragua near the border of Honduras. On these farms he began planting coffee, including this caturra variety which we have to share with you. After his father passed, Eudoro inherited his father's passion for coffee and to this day continues his legacy.
The Guillen family has a strong focus on producing consistently high quality coffee. They value developing and experimenting with new production techniques as strongly as caring for their environment. One farm has a wet mill with their own waste water treatment plant, which allows the recycling of the water that is used during the processing. Eudoro's careful processing of beautiful caturra coffees has now featured him in the Cup of Excellence rankings.
Since 2019, Eudoro began playing around with Carbonic Maceration (CM) processing techniques. In this particular lot CM fermentation was used for a short time in controlled conditions, then the cherries were dried on shaded African beds stacked a few cherries high to maintain this red fruit intensity but develop a refined tactile experience that we are thrilled to share with you!
