Nicholás, a second-generation coffee grower and the team from Finca La Julia believe in the magic their coffees have in showcasing the potential of Colombia’s rural areas for coffee production. This magic has led them to produce some of Valle del Cauca’s finest coffees. Focusing on the sustainability in the coffee farming industry, they have committed themselves to continuous rural development and practices that trickle down to every part of the estate. Being open to experimenting and collaborating, they have produced this unique Castillo.
This 44hr aerobic process Nicholás uses allows them to emphasise the great characteristics that we are finding in this coffee. The sweetness of fresh strawberries, purple violets, marshmallow and long residual sugary after taste are all highlighted with this process.
