Gilberto Baraona a fourth generation coffee farmer was a renowned producer in El Salvador and a pioneer for the coffee industry. We sadly lost him this year due to COVID-19 at the end of June 2020 making this his last harvest. Diego and Fabiola, Gilberto’s son and daughter have now taken the reins and will honour his legacy through their constant innovation and passion for the industry.
Los Pirineos is located on the top of the Tecapa, a volcanic mountain range in Usulutan, El Salvador. The name was given because of its similarity in mountain ranges of the Pyrenes which separates France and Spain. The farm has extensive growing facilities and as such Gilberto grows exotic and experimental varietals. This honey processed coffee undergoes a unique fermentation technique called carbonic maceration to intensify both the aroma and flavours in the final cup.
This elite bourbon lot is sectioned off and is only picked when the cherry is very ripe. This helps to savour the best notes for this delicacy. As such we experience these amazing flavours of sweet pear nectar, tropical notes of papaya and passionfruit, finished off with fresh cherries. As it cools the tropical notes intensify giving it this effervescent and exciting taste profile.
