This is our second year purchasing from Alejo and for you to experience these varietals and techniques side by side.

Warm Anaerobic vs. Forest Shade Anaerobic
Both these Anaerobic Natural techniques involve a similar process. Once the cherries were ripe, they were brought to a wet mill where the floaters were separated then washed before going into anaerobic tanks. For 5 days, the team at the farm measure temperature, brix content, acidity (pH) and time.
This is where it differs, the regular (Forest Shade) Anaerobic process occurs when the tanks are shaded and are only exposed to temperatures around 15 degrees celcius. The Warm Anaerobic process means the tanks get exposed to sunlight and temperatures up to 25-30 degrees celcius. This means a faster than usual fermentation occurs. When the five days is done it is taken to the drying patio for 14 days and finished with mechanical drying for 8 hours.
