Ramiro & Fabricio Coronel | Lactic CM Washed Typica Mejorado
Located in Sozoranga, on the skirts of an inactive volcano called Jatumpamba sits Hacienda La Florida, owned by the Coronel Pilco family since the 19th Century. Brothers Fabricio and Ramiro, are the agronomists behind the farm aiming to protect the dry tropical forest and produce the best coffee!
In 2017 they planted the Typica Mejorado variety, which reacted well within their agricultural system. They also have other varities such as Bourbon, Sidra and other Heirloom varieties on Hacienda La Florida, using a vast amount of processing methods to suit their customers needs.
Last year was their first successful harvest of Typica Mejorado, which they have processed using an experimental process known as Lactic Carbonic Maceration Washed. This process involves handpicking of the best ripe cherries, then fermenting the coffee in mucilage with a special microorganism and Carbon Dioxide, all while controlling the pressure, pH levels and temperature.
After the Lactic Carbonic Maceration process the coffee is washed and dried on African beds with constant movement for 17 days. This whole innovative post-harvest processing has created a coffee that shines with its floral aroma and clean juicy texture. We taste flavours of peach yoghurt, lime and sweet magnolia.
