We are absolutely honoured to be sharing this exclusive lot from the world renowned producers Rigoberto & Luis Herrera of Café Granja La Esperanza. These two brothers were born in Caicedonia, Valle del Cauca, and in 1998 they decided to continue with the family coffee dream that began in 1945. 

We were lucky to take part in their first ever auction 'The Wonders of Colombia' getting our hands on Lot 15C Sierra Nevada Mokka from their Hawaii farm in Sasaima, Cundinamarca. This is also Fran's personal favourite varietal and farm!

Through their obsession with quality and tailored processing profiles, it’s incredible how such a tiny bean can express that many flavours in a cup and its complexity can even beat a 90+ Geisha.

Fresh cherries were fermented for 20 hours in aerobically after being hand sorted selecting the best cherries in the ideal ripeness point. Once this first stage is finished the batch is moved to barrels in where the cherries go through a second fermentation for 90 hours in anaerobic form.

Once fermentation is finished the cherries are moved to a mechanical dryer where they are dried for 15 days until moisture content reaches 11.5%. These mechanical dryers are regulated to a temperature of 36°C-38°C.

From this Mokka we got crazy aromatics of watermelon candy, sweetness of white chocolate, this delicious tartaric red grape like acidity as well as flavours of warm apple pie. We hope you enjoy this special lot as much as we do!
