Meet Wilder Lazo, a veterinarian by trade and passionate coffee lover!
Wilder used to drink his coffee only in the mornings and with one sugar, until one day his father grew sick and wanted to sell the family farm. Even with two buyers lined up, he decided to call Wilder first who made the decision to take over without any knowledge except that when the cherries are red they are ready to be picked!
After taking over his father's farm, he decided to invest in renovating the farm. He also enrolled himself in tasting classes, studied heavily about coffee and also studied the soil at the farm. Today the whole family is proud to be part of the farm, and Wilder no longer drinks his coffee sweetened.
We're very excited to have his Pink Bourbon which has been processed using a Yellow Honey method. Using double fermentation, the cherries were fermented firstly in plastic bags for 100 hours, then pulped and again fermented in cans for another 100 hours. After that the coffee is dried, and Wilder carefully maintains the temperature and pH levels throughout the whole process.
This dedication and passion at El Divisio has resulted in an excellent coffee and flavour profile we're excited to share at Bredda Coffee. It tastes just like candied ginger, strawberry bubblegum and honey!
