We're excited to once again share some beautiful lots from Los Pirineos farm.

In 2020 Diego Baraona took the helm of his family's farm after his father, Gilberto Baraono's passing, carrying on his passion and legacy. Their family has over 130 years of experience and rich history in coffee cultivation within El Salvador.

Los Pirineos is located on the top of the Tecapa, a volcanic mountain range in Usulutan, El Salvador. The name was given because of its similarity in mountain ranges of the Pyrenes which separates France and Spain. The farm has extensive growing facilities and as such Los Pirineos grows exotic and experimental varieties.

Lot 275 was picked when the cherries reached a dark red colour at 20-22 brix, they were then processed anaerobically to develop dark and orange fruit qualities. With a long fermentation time they were able to boost the body and sweetness of this lot.
